Bara Brith in a Saucepan

This is so easy, all done in a saucepan, have used this recipe for years never had a problem. Lovely if you have left overs to make a Bara Brith bread and butter pudding, using Delia's recipe but using the Bara Brith instead of bread.



9ozs dried mixed fruit,

6ozs caster sugar,

4ozs butter/marg,

1 teaspoon bicarbonate of soda,

200ml water,

2 eggs beaten,

4ozs Plain flour (Wholemeal nice),

4ozs SR flour,


Grease and line a large loaf tin (mine measures 30cmx11cmx6cm a continental loaf tin!)
Place fruit,sugar,marg, water and Bi-carb into saucepan. Slowly bring to the boil. Take off heat and leave to cool.
Pre-heat oven to 160c conventional oven, 140c fan oven.
Add eggs and finally flours.
Place in tin and bake, after 30mins check, if catching place foil and bake for anor 30mins. Leave to cool.
