This recipe was given to me by a special friend. I think this cake is a light textured cake compared to other banana cakes. You can freeze it to, I just slice and wrap in foil for another day.
MethodCream butter and sugar ,beat in egg then the banana. Add sieved flour and baking powder.stir the bicarbonate of soda into the hot milk and add beat into the mix then add carrot. I cook this in a greased ring tin but it could be cooked any other tin. It does rise so make sure there is room for this to happen. It takes about 35 / 40 mins so keep an eye on it I cook in a fan oven 170 when done leave in tin till cold and turn out. You can put lemon icing on the top
