Cream margarine & sugar, add eggs a little @ a time & beat well. Add mashed banana & beat again. Fold in flour, salt & bicarbonate of soda, add walnuts if using.
Bake in a 2lb greased & lined loaf tin for 15 mins @ 200 C, Gas mark 6, then reduce heat to 180 C, Gas mark 4 & bake for a further 1/2 hr or until well risen & baked through. (Fan ovens, start off @ 190 C, Gas mark 5 then reduce to 165 C, Gas mark 3)

Banana & Walnut Cake

Freezes well. Slice & eat plain or makes a delicious dessert served with custard.
Ingredients
7oz Self Raising Flour double sieved,1/4 teaspoon Bicarbonate of Soda,Pinch of salt,3 oz Margarine,6 oz Caster Sugar ,2 eggs beaten,2 ripe bananas,2-4 oz Chopped walnuts (optional),(N.B. 1/2 sugar & 1/2 granulated sweetener can be used for a healthier option particularly for those on a low sugar diet i.e. diabetics),,
