Apricot & Date Crunch
A recipe for a scrumptious and easy crunch bar, from a Colchester market trader in late 1978...
2 oz dried apricots
2 oz dried dates
4 oz wholemeal flour
4 oz oats
4 oz brown sugar
6 oz butter
Soak apricots and dates overnight. Simmer for 20 - 30 minutes til tender, in very little water. Mash and leave to cool.
Preheat oven oven to Mk 4/ 350F/180C. Mix remaining ingredients, put half mixture into shallow tin/dish,add apricots and dates, cover with remaining mix. Sprinkle with a little brown sugar and bake for approx 25 mins. Leave to cool in tin for 10-15 minutes, then remove and slice into bars before cooling completely. Yummy...
