Apple or blackberry cake

It can be eaten as a cake or served with some vanilla ice cream, creme fraiche or cream as a dessert.



5 oz butter softened,5 oz caster sugar ( I use golden),5 oz ground almonds,5 oz self raising flour,1 egg,1 tsp ground cinnamon plus more for dusting,2 tsp vanilla extract,8 oz blackberries or apples [peeled cored and sliced], icing sugar for dusting,,


heat oven gas 4 /160C fan/180C non fan.

Grease and line a 23cm springform tin.

Combine all the ingredients except the blackberries or apples and beat well.
Spread 1/2 the mixture into the tin (I use a rubber spatula) then scatter the blackberries or apple over.
Dot over the remaining mixture so that it covers the fruit .
Place on a baking sheet and bake for about 1 hour until golden and springy.
Cool in the tin then sift over icing sugar and cinnamon.

I have also used 3 oz ground almonds and 2 oz polenta instead of 5oz ground almonds and it worked very well
