Apple Cake

12oz flour (self raising),pinch salt,8oz butter,1/2 tsp cinnamon,6oz sugar,4oz sultanas,1lb cooking apples chopped,3 eggs,little milk and demerara sugar


Rub fat into flour and salt
Add sugar and cinnamon
Add egg and fruitand mix well. Add some milk if mixture is too thick
Place in a greased 8 inch cake tin and sprinkle demerara sugar over the top
Bake for one and a half - 2 hours at 180'C
Allow to cool slightly before turning out onto a rack
