Anzac Biscuits

With a nice tea or coffee.



* 85g / 3 oz porridge oats,* 85g / 3 oz desiccated coconut,* 100g / 4 oz plain flour,* 100g / 4 oz Caster sugar,* 100g / 4 oz butter melted,* 1 tbsp golden syrup,* 1 tsp bicarbonate of soda


1) Preheat oven to 180oC / Gas Mark 4 / Fan oven 160oC.

2) Put the oats, coconut, flour and sugar in a bowl.

3) Melt the butter in a small pan or microwave and stir in the golden syrup.

4) Add the bicarbonate of soda to 2 tablespoons of boiling water, then stir into golden syrup and butter mixture.

5) Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture, stir gently to incorporate the dry ingredients.

6) Put dessertspoonfuls of the mixture on to buttered baking sheets, leaving a gap for them to rise of about 2 CM, or roll out mixture on work surface get a circle pastry cutter and press down this way you get same size biscuits. Bake for approx 10 minutes until golden.

Transfer to a wire rack to cool, they will harden whilst cooling.
