Put a small amount of jam in each tart. not too much or it will show through the cake mix!
Mix the other ingredients together. This forms a smooth batter type mixture.
Cover the jam with the mixture.
Bake for 15 - 20 minutes, or until done.

Almond Rice Flour Tarts

This is a tasty tart, with a slightly crisp topping, caused by using the rice flour. Ideal for the Macmillan coffee Morning next week!
Ingredients
Shortcrust Pastry,Jam - any flavour,1/4 cup melted butter,2 eggs well beaten,1 cup sugar,1 cup ground Rice Flour,2 teasp. Almond flavouring
Method
Line 3 tart tins with the pastry.Put a small amount of jam in each tart. not too much or it will show through the cake mix!
Mix the other ingredients together. This forms a smooth batter type mixture.
Cover the jam with the mixture.
Bake for 15 - 20 minutes, or until done.
