Fry bacon in own fat until crisp. Drain and add mushrooms to same pan for a minute or so.
Mix together flour and cheese in a bowl.
Season well with salt, pepper and paprika.
Stir in tomatoes and bacon.
Whisk together eggs and milk. Pour into dry ingreds and fold the mixture - but not too much. Over folding will ruin the texture of the muffins.
The mixture doesn't want to be wet, so it's best to add the egg mixture bit by bit.
Spoon the mixture into the muffin tins and bake in oven for 20 - 25 mins.

Ingredients
1 pkt pancetta fried and broken into pieces,2 or 3 mushrooms sliced,350g S.R. flour,250g cheese (parmesan or cheddar or mix both),Pinch paprika,2 med tomatoes seeds removed & chopped,2 eggs,550ml milk,,
