concertina garlic potatoes

serve the baked potatoes on individual plates with a dollop of the fromage yogurt mix on top of each, they make a good meal on there own, or with grilled meat or fish

 
 
 
 

Ingredients

serves 4, 4 baking potatoes, 2 garlic cloves cut into slivers, 4 tbsp low fat fromage frais, 4 tbsp low fat natural yogurt, 2 tbsp sniped chives, 6-8 watercress sprigs finely chopped ( optional)

Method

1 - preheat oven to gas mk 6.
slice each potato at about quarter inch intervals, cutting not quite to the base, so that they keep their shape, slip slivers of garlic between the cuts in the potatoes
2 - place the garlic filled potatoes in a roasting tin bake for 1to 11/4 hours or until soft when tested with a knife, meanwhile, mix the fromage frais and yogurt in a bowl, stir in the chives and watercress.
