Tarka Dhal (Garlic with lentils)

I feel the most simple and underestimated Indian Style Vegetarian Starter, Snack, Main course,Cold as a canape topping

 
 
 
 

Ingredients

120gm Red lentils or Yellow split peas,which is my favorite 1/2 tsp. Turmeric 2tsp Salt 1Lt Water 1tbs Clarified butter 2 Cloves garlic (peeled & sliced) 1/2tsp Cumin seeds

Method

• Fry the lentils and turmeric in half the ghee for 2 mins (not to brown) • Add water and bring to boil, simmer for app. 1/2 hour or until lentils are cooked • The dal should be of a thick soup consistency (look after water content) • Heat clarified butter, add garlic until dark brown, add cumin • Add salt to taste
