my recipe for stuffed Marrows and courgettes, a family fav (even for the neices)...You could easily substitute the mince meat with quorn mince
1 Marrow/Large Courgette.,1 small onion finely chopped.,200g minced beef.,100g sausage meat/sausages or extra minced beef.,30g fresh white breadcrumbs.,1 tbsp chopped parsely.,1 tbsp chopped chives.,1 tsp worcestershire sauce/balsamic vinegar,S & P.,1 egg beaten.,250ml Cheese Sauce (own or from a jar)
Halve the marrow lengthways, and scoop out the seeds.
Lay each half side by side in a casserole dish or roasting tin, suitable sized dish basically.
Put the onion in a bowl with the mince beef and sausage meat or extra beef, add the breadcrumbs, herbs, worcester sauce and seasoning, MIx well - use your hands.
Add the beaten egg to the mixture and combine till mix is binded together.
Divide the stuffing between the 2 halves, cover the dish with foil and bake in the oven at 180c/gas4 for one hour.
Meanwhile make your cheese sauce (or open the jar).
after an hour remove the marrows from the oven and drain off the excess liquid.
pour over the cheese sauce. and bake again for another 20 mins, until the cheese sauce is bubbling and nice and brown.
