Harissa couscous

Goes brilliantly with a tagine. This is enough for 6-8 people - I normally halve this for 4 people - but it's nice served cold too!
Ingredients
400g Couscous
Bunch of spring onions, finely sliced
3tabsp roughly chopped mint
250g cherry tomatoes, halved
400ml vegetable stock
1tsp harissa paste
3tabsp olive oil
juice of 1 lemon
Method
Tip couscous into a heatproof bowl. Add the spring onions, mint and cherry tomatoes
Pour over the hot vegetable stock mixed with the harissa paste. Stir and cover with a plate. Leave for 5mins , then pour over the olive oil and lemon juice and stir through
