Green Beans in Oil - Serves 6

We enjoy any green bean cooked in this manner, cut beans to approx 2 inch length, and find it delicious, hot, warm or cold. I have frozen the dish quite successfully. I usually cook this much longer on a low gas.



500 g / 1 lb green beans,¼ cup olive oil,1 medium size onion,2 cloves garlic chopped,1 cup chopped peeled tomatoes,1 tbs tomato paste,½ cup water,salt & freshly ground black pepper,½ tsp sugar,2 tbs chopped parsley.,


1. Wash beans well, top & tail them & remove strings, if present. Cut into 2 inch lengths.
2. Heat olive oil in a pan & add onion – fry gently until transparent, add garlic & cook a few seconds longer.
3. Add tomatoes, tomato paste, water, sugar, salt & pepper to taste. Cover & simmer for 15 mins.
4. Add prepared beans& parsley. Cover & simmer for further 15 – 20 mins, until beans are tender. Serve hot or lukewarm in the traditional way. Very good served chilled.
