Grapefruit Sauce

This goes well with barbecued chicken



1 Pink grapefruit

125 mls Olive oil

1 Tablespoon white vinegar

3-4 Tablespoons chopped parsley


Cut grapefruit in half and remove segments, put them to one side. Put the rest of the ingredients and squeeze whatever juice is left in the grapefruit in with them. Mix well.  Serve the segments with the grilled chicken and pour the sauce over the chicken.
