Easy Clotted Cream

Clotted cream is not always available in the shops and this is such an easy version, paticularly delicious on scones for Summer cream teas.
Ingredients
700 mls Double Cream
25g butter
Method
Put the cream and butter in a saucepan over a gentle heat.
Stir continuously until mixture reaches simmering point and then for 20 minutes or so until it has reduced by half.
Pour into dish and chill overnight.
