Easy Rice and Peas

Great with chicken or pork or just on its own!

 
 
 
 

Ingredients

115g Basmati Rice,200ml coconut cream,150ml Water,1 300g can kidney beans,Handful coriander leaves roughly chopped

Method

Rinse rice in water then tip into saucepan
Add coconut cream and water
Bring to boil
Simmer for 6 mins
Add kidney beans
Cook for a further 5 mins or until rice is tender
Drain, return to pan.
Season and stir in coriander leaves
