Easter Biscuits

12 oz plain flour/1 teaspoon baking powder/1 teaspoon mixed spice/1 teaspoon cinnamon/6 oz. butter/6 oz. caster sugar/4 oz. currants/2 eggs


Sift flour, baking powder and spices. Rub in butter. Stir in sugar and currants. Add beaten eggs and mix to a stiff dough. Turn out onto floured board and knead lightly. Roll out to about thickness of a pound coin. Cut into large rounds. Place on greased or lined baking sheet, leaving room for spreading. Bake 180C/350F/Gas 4 for 15-20 minutes. Allow to cool slightly then transfer to wire rack to finish cooling.
