Chicken and Herb Balls.

This is a recipe from a Slimming World Cookbook,and theyre totally delicious! Very tasty and great with salad,or as an accompaniment to a bbq,buffet spread.And so low in fat.



4 spring onions trimmed and finely chopped 2 garlic cloves 511g/1 1b 2oz lean chicken mince 1 red chillie,deseeded and finely chopped 1tsp each of Ground Ginger,ground Cumin,& ground Coriander 2 tbsp finely chopped mint 2 tbsp finely


Place the spring onions, garlic,chicken mince,red chillie,ground spices,and chopped herbs,into a mixing bowl,season and using your fingers mix thoroughly, cover and chill for 3-4 hours. Preheat oven to gas6/200c line a large baking sheet with non stick parchment paper. Divide the mixture into 16 portions and shape each one into a ball,place balls on the prepared baking sheet and place in the oven for about 20mins,or until cooked through. Remove from the oven and serve hot with lime wedges and a very low fat natural fromage frais dip. I served it with salad and hot spicy potatoes.Fabulous!!.
