sieve the flour and seasonings
rub in butter until fine breadcrumbs, add cheese.
Bind with egg yolks.
roll out firmly, but gently, to 5mm / 1/4 inch thick
cut into narrow fingers. re-roll till all used up.
place on lightly greased tray and brush with egg white.
bake until golden.
These are very fragile so do not move from baking tray until cool. happy baking

Cheese straws

great for party or buffet. I make them every boxing day , when family come for a buffet meal.
Ingredients
oven; 425f /220c /gas mark 7. cook 8-10 mins max.,8oz ( 225g) plain flour,good pinch of salt & shake of pepper,pinch dried mustard & shake of celery salt,5 oz(140g) butter,4oz(110g) very finely grated firm cheese.,2 egg yolks,Use egg whites to glaze
