Cheese Fondue

Serves 6 - From The Best of Bridge - Royal Treats for Entertaining
Ingredients
2 cups dry white wine,1/2 lb Emmenthal cheese (grated),1/2 lb Gruyere cheese (grated),2 tblsp flour,1 clove garlic halved,3 Tblsp (or more) of brandy,French bread cut into cubes,sprinkle of paprika
Method
Toss cheese with flour in large bowl. Rub cut ends of garlic around the fondue dish. Pour wine into fondue dish and heat slowly over the burner until bubbles rise. Stir in cheese mixture (a small amount at a time) with a wooden spoon. Let each addition melt before adding more. Stir in brandy and sprinkle with paprika.Dip in the French bread.
