CREMA ALLA MASCARPONE

Ingredients

2 EGGS SEPARATED,50G CASTER SUGAR,275G MASCARPONE,1 TBLSP BRANDY OR KIRSCH,

Method

Whisk the egg yolks and sugar, then add the mascarpone and beat til light and creamy. It’ll take a couple of minutes with an electric whisk. Stir in the liqueur.
Wash the beaters, then whisk the egg whites til stiff. Fold into the cream, gently but thoroughly with a metal spoon. Spoon into glasses and chill for at least 20 minutes.
