I use a hand held electric whisk for this and it works perfectly. This is for people who find the usual butter icing too sweet for their taste.



2 oz butter,2 oz icing sugar,2 tbspoons boiling water,1 1/2 tbspoons milk


Beat together the icing sugar and the butter and dribble in the boiling water.
Beat in the milk gradually.
If you are making coffee butter cream, just reduce the amount of milk.
