British Virgin Islands Style Hot Sauce

3 or more hot peppers (scotch bonnet or similar) seeded and finely chopped (advisable to wear gloves here!),1 onion finely chopped,3 cloves garlic finely chopped,1/2 teaspoon turmeric,3 tablespoons malt vinegar,1 teaspoon salt,


Combine all the ingredients in a food processor until reduced to a puree.

Pour into a saucepan and bring up to the boil.

Simmer for 3/4 minutes then allow to cool.

Perfect with any meat or fish dish!
