Braised red cabbage

Can be frozen!



1 red cabbage shredded,50g butter,1 large onion sliced,1 large cooking apple sliced,1 tablesppon sugar,2 tablespoons red wine vinegar,salt and pepper


Blanch cabbage in boiling water for about 5 mins. Drain
Melt half the butter in a pan. Add onion and apple and cook for 5 mins till soft
Spread one third cabbage in greased ovenproof dish. Cover with one third apple and onion and sprinke with little sugar, vinegar salt and pepper
Repeat layers twice more
Dot remaining butter on top
Cover with lid or foil. Bake 160c for 2 hours stirring every now and then
