Bombay Potatoes - serves 4-6

Ingredients

450g new potatoes.,salt to taste.,1 tsp turmeric.,4 tbsp veg oil.,2 dried red chillies.,6-8 curry leaves.,2 onions finely chopped.,2 fresh green chilliesm finely chopped.,50 fresh coriander roughly cho[pped.,1/4 tsp asafoetida (anti fart making powder),1/2 tsp each of cumin mustard onion fennel and nigella seeds.,lemon juice to taste.

Method

wash the pots and cut into small pieces, boil the spuds in water with a little salt and 1/2 tsp turmericm for 10-15 mins until tender, drain then lightly mash them (varying lump sizes).

Heat the oil in a pan and fry the dried chillies an dcurry leaves until nearly burnt.

Add the onions, green chillies, fresh coriander, remaing turmeric and spice seeds tot he pan and cook until the onions are soft.

Fold in the pots. and add a few drops of water. cook over a low heat for about 10 mins, stirring well to ensure the spices are evenly mixed and nothing sticks to the bottom of pan.

Add lemon juice to taste and serve.
