Beetroot Salad

Another lovely side salad.

 
 
 
 

Ingredients

Pack of cooked Beetroot chopped,

1 red jelly,

½pt boiling water,

¼pt vinegar (any, red wine vinegar is good),

2 tabsp lemon juice,

Method

Breadk up the jelly and place in a measuring jug, add the boiling water and allow to dissolve. Blast it in the microwave for 30secs to speed things up. Add the vinegar and lemon juice. Pour over the chopped beetroot, cover and place in the fridge overnight. I find it sets quicker if you make it in a shallow dish. Prior to serving chop it all up, easier to serve.
