Beetroot Pudding

serve, hot or cold



6 oz wholemeal flour, 4 oz raw beetroot finely grated, 1 oz sugar, 3-4 tbsp milk,half a tsp baking powder,quarter of an oz butter or margarine, few drops vanilla essence


set oven to gas mk 5
sieve together flour and baking powder, rub butter/margarine lightly into the flour until it looks like bread crumbs.
Add the beetroot,sugar and essence, mix thoroughly
stir in enough milk to produce a soft dropping consistency, pour into a greased oven proof dish.
Bake for 35 mins
