Use in Balti Cuisine

60g Coriander seed,30g Cumin seed,25g (40ml) Gram Flour ((Besan)),25g 40ml garlic powder,20g 35ml Paprika,20g 35ml Turmeric,25g 40ml Garam masala,5g 10ml Ginger powder,5g 10ml Chilli powder,5g 10ml Yellow mustard powder,5g 10ml Ground Black Pepper

Place the first three whole spices onto a baking tray amd roast under a hot grill for about 2-3 minutes. You MUST NOT let them burn

They will begin to give off smoke and aroma, the coriander seed (small round ones) will become brittle, this will indicate they are ready

Grind these spices together in a coffee grinder until they resemble a fine powder

Mix these freshly ground spices with the remaining spices above and store in an airtight container
