BUTTER CREAM ICING

This spreads very nicely on a Victoria sandwich and is not so sickly sweet as normal butter icing.

 
 
 
 

Ingredients

2 oz butter,2 0z caster sugar (or 1 ½ oz if you find it too sweet),2 tbs boiled water,1 ½ tablespoons cold milk

Method

Beat the butter and sugar
Gradually mix in the water beating all the time
Then add the milk still beating all the time until you reach a creamy consistency.
Add any flavouring you like - vanilla extract, coffee, lemon zest and juice etc.
