Avocado, Tomato and Kiwi Salsa

A fresh, colourful dish with lively sweet and tangy Mexican-inspired flavour combinations. Incredibly simple to prepare. Goes beautifully with robust flavours such as grilled lamb or seared tuna. Or serve on its own with some toasted tortilla wedges.



1 ripe hass avocado peeled stoned and the flesh finely chopped, 8oz baby plum (or cherry) tomatoes finely chopped, 2 large green kiwifruit peeled and finely chopped, 1 small red onion peeled and finely chopped, 1 jalapeno chilli pepper deseeded and finely chopped, 2 tablespoons of fresh coriander leaves chopped, juice of 1/2 - 1 lime, 2 tablespoons extra virgin olive oil, salt and freshly ground black pepper


Gently combine all the ingredients in a bowl, season well and serve immediately
