Aubergines au Gratin

A huge salad and lots of wine

 
 
 
 

Ingredients

3 large Aubergines sliced,salt and pepper,1 pint tomato and pepper sauce (see recipe),50g grated cheese,1 tablespoon grated parmesan cheese

Method

place aubergines in colander. Sprinkle with salt leave for 30 mins
Drain, rinse and dry.
Blanch in boiling salted water for 1 minute. Drain and cool
Layer Aubergines and sauce in dish Season and top with cheese
Cook 190c for 30 mins. Then lower temp to 160c for further 45 mins until fully cooked
Freezes really well (freeze uncooked)
