'Amazing' Dry Spice Rub

I usually marinate the meat with this dry rub overnight, bring it to room temperature and then cook.

 
 
 
 

Ingredients

1 Tablespoon cardamon 1 Tablespoon poppy seeds 1 cinnamon stick (broken up) 1 Teaspoon rock salt 1 Teaspoon peppercorns 2 good sprigs of fresh thyme (leaves) and 2 chopped fresh (or dried) bay leaves.

Method

Pound all of the ingredients together in a Pestle and Mortar till it's a rough mix, it takes a bit of time but the end result is worthwhile. Rub the mix into Chicken (whole or jointed). Roast or BBQ till done.
