Abergine bake.

This can be served on its own or with any main meal.

 
 
 
 

Ingredients

1 Aubergine,Tin tomatoes,2 mushrooms,1 leek,1 spring onion,vegetable cube,pinch of chilli powder (optional),1 egg,1oz of cheese,1 tablespoon of low fat creme fraiche

Method

peel aubergine,cut up all other vegetables and fry in a low fat spray. When soft add tin of tomatoes and place in a casserole dish.
Whisk egg and add creme fraichepou over the top of vetables and cook in an oven for 25 minutes on a medium heat,
