I would love to make some of Delia's delicious pear and almond cakes with streusel topping now, as I have some pears which would be prefect for them. However, I would like to know if I can freeze the cakes, please!

I am in Australia..should I now keep it in the fridge wrapped and in a box? It is, obviously, a lot warmer here than in the UK
I make the Christmas puddings every year and do so with them and they are ok..but not sure about cake
Crème Caramel. When I add warm water to the melted sugar, the sugar shrivels to a molten lump. Remelting it just leads to a very hard to clean pan. I've tried this with both warm and hot water, without success. What am I doing wrong?

Dela's recipe Orange cheesecake with strawberries from Family Fare 2 a BBC series in 1974! The recipe states 3 fluid ozs concentrated frozen orange juice. This is no longer available and I wondered what I can replace this with? I really loved this recipe and would love to recreate it.

I baked my first Christmas cake this week, Delia's rich fruit cake.. The first test cake was cooked last Saturday, cooled for 24hrs before I cut out a slice, but the cake crumbled when I sliced it using a straight edge blade. Can you tell me why it crumbled please.
PS it tasted fabulous......
