Delia's Veggie 'sausage rolls' from the Happy Christmas Book
Last year I had so much trouble making these, so I thought I'd ask for some help before this year!
Firstly, when I tried doing my own puff pastry (my first attempt at this) it was a disaster - I now think perhaps I didn't keep it cold enough.. any tips gratefully received!
I've just made Delia's Christmas Pudding Recipe again as it is always such a great recipe. I make 2 largish ones and a smaller one from the full quantity recipe. Delia's instructions say to pack the mixture to the top of the pudding basins, but I found in the past this leads to the mixture leaking slightly. To prevent this I now only fill the basins to within about one inch, which means I make the three puddings as I mentioned above. I just wondered if you could offer any advice about this please.
My daughter has asked me to make a carrot cake for her wedding cake and I would like to upscale/downscale the Ultimate Carrot Cake recipe to make 6", 9" and 12" cakes. I have looked on line and found general guidance ie multiply/decrease ingredients by a certain factor, but can see that this general rule of thumb doesn't work for all cakes and wish that she had chosen a rich fruit cake as you have given all the adjusted ingredients/timings!
