Freezing muffins and biscuits!

My question is about freezing biscuits and muffins.
Can either pre-baked batters be frozen and then cooked as and when required..? Or is better to freeze them cooked and then defrost as and when needed.
We take guests in our home and frequently bake muffins in the morning. The guests love the aromas wafting through the house early in the morning.
We make a batch of 12 and sometimes they're eaten in a couple of sittings or sometimes not at all.
Gluten free Christmas Cake
Hello - I have used Delia's Rich Fruit Cake recipe at Christmas for many years, but now need to make it gluten free. Can i just directly substitute the flour for gluten free flour, or do I need to make other adjustments such as using less flour or using more egg, to make the mixture wetter? Thank you
