Mouldy Christmnas Pudding
I tried using expensive Couvoissour French brandy in the Xmas cake - there was no brandy flavour or smell whatsoever. Please recommend the name of the strongest brandy to use. How much should I use? I used the same brandy to flame the pudding and there was no taste. Please advise.
I made the Xmas pudding with fresh breadcrumbs from an uncut white loaf from the bakery. I left the pudding in a cold cupboard to mature . After a month I took the pudding to the steamer , unwrapped it and mould has grown on it. What did I do wrong? I followed the receipe's instructions.

About Plum and Soured Cream Tart
Hi Lindsey,
I am going to make Delia's Plum and Soured Cream Flan. Please can you tell me why the pastry is not baked blind first? Could I use all butter for the pastry as I don't use lard these days. Also can I make the flan a day in advance or freeze it?

Butterscotch Sauce in 'Old School' Tart
Would the butterscotch sauce in the Butterscotch and Banana Sundaes recipe, set to make a butterscotch tart?
I am yet to find a good recipe for an old fashioned Butterscotch tart.

When to make Christmas Cake

I'm planning on making this cake for 2023 and would like it to be ready for 1st December (when we'll be getting the tree!)
How far in advance would you recommend making the cake? I intend to 'feed' it with brandy a few times and I know some cakes need time to mature. Therefore, should I make it in early November or is that too soon?
