Shortcrust pastry is breaking
Hello Lindsey, I am trying to bake the English Apple Pie and I have two questions: could I use rice flour for a gluten free version (for friends)? Also I’m following the recipe to the letter and even when using normal flour, when I roll the pastry it breaks. Could I use Atora’s vegetable suet instead of lard and butter to make it more workable? I live in France and have been using the butter brand president gastronomique 82% fat and wonder if this is the problem? The lard shouldn’t be the issue as it would be the same as I’d buy back home in the UK.
3lb loaf tin Christmas Cake
Hello. I am just thinking about making Christmas cakes. We normally opt for Delia's traditional fruitcake recipe for either 9inch round or 8 inch square size. However I am thinking of switching to a 3lb loaf tin this year. Can you give advice re: how we should adjust the mixture and cooking to time to accommodate this please. I have seen advice for a 2lb loaf tin - but not 3lb!
Mini Christmas cakes advice
I have been making Delia’s rich fruit cake for Christmas for many years now and always get compliments. This year I would like to use the recipe to make mini cakes as gifts. I will be using the Lakeland mini pudding tins and would like to know for how long the cakes should be baked in a fan oven. Thank you.
The tea towel over cooked rice
I cook basmati rice to Delia's recipe. However, the second phase of cooking is to cover pan with a cloth for 10 minutes. Do you put the lid back on or leave it off?
Looking for a pork recipe...
Hi, several years ago I used a really tasty recipe for pork loin stuffed with chorizo and I think apple. I also think there may have been cassis in the gravy.
Unfortunately I have lost the recipe and can't find it anywhere on line.
I would like to make it again for some friends 60th wedding anniversary lunch.
Would you know where I can find the recipe please.

Gluten free Christmas cake was too liquid!
I have tried making the traditional Christmas cake with gluten free flour and no other changes. The mixture largely leaked out of the loose base so the fruit was exposed on top. I have used this recipe with standard flour successfully for many years. Please advise.
