Mincemeat in an Instant Pot
I am just about to make some mincemeat again (always use this recipe) but now that I have an instant pot, which does everything including sous vide and keep warm function. I was wondering whether I could use it to 'melt' my mixture rather than put it in the oven?
The way I see it I could either place the whole mixture in the pot or put some water in the bottom on ?? temperature and place the covered bowl on top of it.
I'd be interested what you would recommend.
Rolling the Hazelnut Roulade

I am planning to make Delia's Chocolate Hazelnut Meringue Roulade for a family party. I am quite confused that the instructions seem to say to roll it from the long side - do I have this right? It seems very weird to roll a Swiss roll-type desert this way, worried it will be very long and thin!
Mouldy Christmnas Pudding
I tried using expensive Couvoissour French brandy in the Xmas cake - there was no brandy flavour or smell whatsoever. Please recommend the name of the strongest brandy to use. How much should I use? I used the same brandy to flame the pudding and there was no taste. Please advise.
I made the Xmas pudding with fresh breadcrumbs from an uncut white loaf from the bakery. I left the pudding in a cold cupboard to mature . After a month I took the pudding to the steamer , unwrapped it and mould has grown on it. What did I do wrong? I followed the receipe's instructions.

About Plum and Soured Cream Tart
Hi Lindsey,
I am going to make Delia's Plum and Soured Cream Flan. Please can you tell me why the pastry is not baked blind first? Could I use all butter for the pastry as I don't use lard these days. Also can I make the flan a day in advance or freeze it?
