Christmas Pudding without Beef Suet
Hello,
I'm hoping to make Delia's Christmas Pudding and note that the recipe calls for shredded suet. Does it have to be beef suet or will vegetable suet work? I can't find beef suet in Ireland.

Instead of Barley Wine
What can I use instead of barley wine in my Christmas puddings? I can usually find stout, but barley wine is more difficult to find
Walnut shortbread crumbles
I’ve made the walnut shortbread many times and it’s delicious, however I always end up with a very dry mixture, not a dough at all, and it crumbles when rolled out. Am I doing something wrong? I’ve even asked someone else to make it and they had exactly the same result. How do I get the whole ingredients into a dough that can roll from the 30 minutes in fridge please?
Using egg replacement in Dundee Cake
I have been making Delia’s Scottish Whisky Dundee Cake for family and friends since about 1990. I guess I have passed the 150 mark by now . We now have a vegan in our family and have tried the past couple of years to adapt the recipe using egg replacer from Healthy Food Brands of Worthing and vegan fat. The cakes have looked good but if not eaten immediately develop a sweet sickly taste over time . Something is obvious changing which increases some form of sugary taste. What should I do to deliver that tried and tested Christmas cake suitable for all diets ?
Sticky Prune and Date Cake for Christmas
Thank you for your reply concerning the Sticky Prune and Date Cake. I thought I added a comment, but now am unsure if I posted correctly. My comment was really a question. I've been looking for an alternative Christmas cake recipe. This recipe seems to fit the bill, being a rich fruit cake. I am unsure how this cake would stand up to marzipan and icing. Any help in helping me decide will be happily accepted. Best wishes.
