Getting ahead with the mince pies and sausage rolls
Hi,
I have quite a few visitors coming over Christmas and Oh boy do they know how to eat my mince pies and sausage rolls, l have got to make a lot. My questions are,
1. Can l freeze both sausage rolls and mince pies.
2. Do l cook them first or freeze them raw.
3. If frozen how long and at what temp should l cook them.
It would be much easier for me to be able to make them a week or so before Christmas and just get the out of the freezer as needed.

Can I substitute calvados for brandy? If not, what else could I use?

I was wondering if Delia had information about gluten free baking anywhere?
Overcooked Christmas Cake
I've just made this cake, and didn't look at it for 4 hours as instructed. At that point it seemed ready so I took it out of the oven. Disastrously the edges are completely hard and overcooked. My oven is a brand new smeg range and I cooked the cake as instructed. The middle of the cake seems OK. This is such a waste, I'm going to have to start again. How do I make sure the middle is cooked without overcooking the sides? And yes, I did double line the tin.
Missing Easy Onions!
After using recipes from “Delia’s how to cheat” I’ve become a great fan of Eazy onions but recently they have been unobtainable in my local supermarkets. Is there another brand I could use?
