Classic Christmas Cake without alcohol

Hope you're well.
I would like to bake a classic Christmas cake, however we do not consume any form of alcohol.
Can you suggest an alternative ingredient I could use to feed the classic Christmas cake please?

Making a larger Prune and Armagnac Christmas log
Hello Lindsey
I want to make Delia's Prune & Armagnac log but instead of the 20cm x 30cm swiss roll pan used in the recipe, I want to upscale and use a 26cm x 38cm swiss roll pan. I am thinking to increase the ingredients by 50%. Could you kindly advise me whether I am on the right track or not please. I don't want to make any mistakes and ruin it!

Less dark chocolate mousse
Hi Lindsey. I want to make a chocolate mousse for a gathering before Christmas but several guests don’t like a bitter taste and prefer milk chocolate. Can you make a delicious mousse with dark and milk chocolate or just milk chocolate without losing the richness. Iv e never made one before bit want a light mousse Thank you
