Not enough sugar in the Christmas Pudding!

Getting ahead with Roasted Vegetables
I would like to prepare ahead with the oven-roasted winter vegetables to go with the fillet of beef in pastry.
The recipe mentions the celeriac discolouring and to leave it until last. My question is, will the celeriac become discoloured if I prepare it the day before along with the other vegetables if they are all coated in herbs, garlic and olive oil, or do I need to delay cutting the celeriac until the day? Many thanks
