I plan to try out the Hot & Sour Pickled Prawns but am away for a few days prior to the dinner party.
The recipe says to marinade the prawns for at least 48 hours. Would it be ok/safe to leave them marinating while I'm away? It would mean that they marinate for 4 rather than 2 days.

I have made the vegetarian moussaka with ricotta topping several times, and the topping always splits. I have cooked it at 180 as suggested, shortened the cooking time, reduced the temperature, and each time the topping has split. I am a very experienced cook, so I don't know what more I can do.
I made Delia's chocolate cheesecake.......but yesterday when we came to eat it.....the plate it was sat on ended up with what looked like a pool of oil. I kept to the recipe the only thing I did different was to put on the base of the tin a baking parchment circle............have you any idea what caused this please. Did not look very appetizing.
