Making trifle without the alcohol

Help with the wholemeal loaf

We are trying to make your whole meal loaf , but it is not rising enough and when we cook it, it actually shrinks in size.
We are using oldums strong whole meal flour , easy bake yeast , dessert spoon of salt , with 350 mil of hand temperature water
We are doing as your recipe and cleaning the bowl to form the dough , Turing it onto a floured surface doing oblong shape and putting in a greased tin, leaving to rise ,
It only rises level with the tin , 2lb standard loaf tin, never above.
We are cooking it at 200 degrees in an electric fan aga.
Roasting shoulder of pork
My shoulder of pork is larger than a belly pork joint
Can I cook it the same way ie surrounded by tin foil
to give me a crisp crackling.
