Making fruit sauce or coulis with frozen fruit

Do you defrost frozen fruit before making a coulis or a purée sauce for a cheesecake topping please.

Alex's Tomato and Grana Padano Tart
TOMATO & GRANA PADANO TART WITH AIOLI recipe; due to the lack of photographs demonstrating points 6 and 7 in the method; and not seeing any edge gaps in the finished photo; I'm struggling.
Pastry is flat.
First topping (point 6) leaves 1 gap from the edge, second topping (point7) leaves a different gap.
Can someone please explain to me exactly how to put this tart together? The wording is confusing to anyone with a Neurodivergent brain and executive functioning issues
