Christmas Cake without alcohol
Hi there,
I have used this recipe for years and really love it.
This year I need to make a non alchoholic version that my children can enjoy. What would you suggest soaking the fruit in instead of brandy?

What is Demerara sugar?
The Creole cake recipe states Demerara sugar. Is that soft dark brown sugar? Soft light brown sugar? Or the big brown crystals?

Can I freeze hollandaise?
Hi there,
I'm making John Tovey's quick hollandaise sauce from Delia's Complete Cookery course. Please can you advise if I can make it several hours in advance or even overnight and let it cool, then reheat, or will it solidify or curdle?

Alcohol free Chrismas Pudding!
Is it possible to make this with alcohol free stout and rum? Would it still be adequately preserved until Christmas? Thank you
Making an 18cm Christmas Cake
Hi Lindsey - I'd like to make Delia's Classic Christmas Cake in smaller tins - so using an 18cm tin rather than a 20cm tin. Can you advise on quantities and cooking times needed for the smaller tin size? Thank you very much. Richard
