Burnt Creole Cake
I’ve just made the Creole Christmas cake for the first time in twenty years, following the recipe on this site to the absolute letter. Sadly the result is burnt and not very nice - a complete waste of about £20 worth of ingredients. When I checked the original recipe in the Happy Christmas book I realised two things: one, the quantities are for a 20 cm square tin, not round as stated on this site; two, the temperature of 140 is for a non-fan oven. I now realise I should have reduced the temperature for my fan oven, and used a square not a round tin.

Im making Delias mincemeat. Ive made it every year for so many years. Perfection every time. This year, a bit late, too much going on at home, palliative care for son etc, I added the Brandy before putting it in the oven for the 3 hours. Help!!!! Have I ruined it. What can I do, please to not change the taste at all? Sally K

Hi - I’m just reading through the whole meal bread recipe and Delia doesn’t knead the dough - is this correct? I would normally knead for at least 10 minutes!!

By how much do you reduce the cooking time for example for a 400ml pudding or 600ml pudding?
Also rather than steaming for 8 hours would it be possible to pressure cook them. I appreciate different pressure cookers may have different timings but some guidance on this would really helpful
