Hi Linsdey,
I’m making the Creole Cake for Christmas, but won’t have time to soak the fruit for 7 days. I will probably only be able to soak them for 3 days. Will this cause much of a difference to the final cake?

Q2 my wonderful butcher sells fresh suet. Can’t find GF suet in local stores. How much fresh suet should I use instead of the packet stuff.

Reheating frozen vegetable lasagne
Hi,
Once the Roasted Vegetable Lasagne is frozen, do you cook it from frozen or defrost first?
The angel cutter and ready made icing
I would like to buy ready made almond paste and Royal icing for my Creole Christmas cake. Is there a brand you can recommend also where it can be purchased. Also where can I buy a Angel cookie cutter as shown on the Creole Christmas cake
Crumble shortcrust pastry
Why is my short-crust pastry too short? It crumbles as I’m lifting it out of patty tins (for example).
I’m a very experienced cook and have the reputation of being an excellent pastry maker. This is because when left and frozen then revived in the oven my mince pies are good. However, I would like eat them before this process and without having to throw away a good proportion that is in bits.

Icing a Creole Cake
Can I put icing on the top of the creole cake. It says not in the recipe book but in your online picture it is.
